 COCONUT RICE


Ingredients:

  • Rice - 1 cup
  • Grated fresh coconut - 1 cup
  • Ghee  or  Coconut oil - 1 tbsp
  • Salt to taste

For Seasoning:

  • Mustard seeds - 1 tsp
  • Black gram dhal - 1/2 tsp
  • Bengal gram dhal - 1/2 tsp
  • Red chillies - 5
  • Broken Cashewnuts - 1 tbsp
  • Peanuts - 1/2 tbsp
  • Curry leaves - few

For Garnish:

  • Coriander leaves - 1 tbsp (chopped)

Method:

Cook rice and allow it to cool. Add 3 tsp of ghee or oil to that and mix gently. 

Fry seasonings in ghee, add coconut at the end, and fry for 3 to 5 minutes, add to the rice and mix gently.

Garnish with coriander leaves. serve hot with pappad.
