AVIAL
(VEGETABLE RECIPES)
Ingredients:
- Coconut oil - 1 tbsp
- Small Brinjals - 50 gm
- Carrots - 50 gm
- Beans -50 gm
- Potatoes - 50 gm
- Drumstick - 1
- Yam - 50 gm
- Mango - 1 (small size)
- Cluster beans - 50gm
- Raw banana - 1 (small size)
- Yellow pumpkin - 50 gm
- Green pumpkin - 50 gm
- Turnip - 50 gm
- Thick Curd - 2 tbsp
- Salt to taste
Grind into Paste:
- Grated coconut - 1/4 cup
- Green chillies - 5 to 6
- Cumin seeds - 2 tsp
- Rice flour - 1 tbsp (for thickness)
- Ginger - 1/2 inch piece (optional)
For Seasoning:
- Mustard seeds - 1/2 tsp
- Black gram dhal - 1/2 tsp
- Curry leaves - few
- Asafoetida - 1/4 tsp
- Turmeric powder - 1 tsp (optional)
Method:
Cut evenly all the vegetables in one inch pieces and wash thoroughly. Keep aside.
In a large pan add coconut oil mustard seeds,black gram dhal,curry leaves,asafoetida,turmeric powder, salt, vegetables and 1/2 cup water cook for 20 to 30 minutes.
Add ground coconut paste and the rest of the ingredients and cook for 5 to 10 minutes in the low flame. Stir in between.
Finally add curd and mix gently. Standing time of 3 minutes to be given.
Serve hot with rice or chapathi or dosa.
