 AVIAL

 (VEGETABLE RECIPES)


Ingredients: 

  • Coconut oil - 1 tbsp
  • Small Brinjals - 50 gm
  • Carrots - 50 gm
  • Beans -50 gm
  • Potatoes - 50 gm
  • Drumstick - 1
  • Yam - 50 gm
  • Mango - 1 (small size)
  • Cluster beans - 50gm
  • Raw banana - 1  (small size)
  • Yellow pumpkin - 50 gm
  • Green pumpkin - 50 gm
  • Turnip  - 50 gm 
  • Thick Curd  - 2 tbsp 
  • Salt to taste

Grind into Paste:

  • Grated coconut - 1/4 cup
  • Green chillies - 5 to 6
  • Cumin seeds - 2 tsp
  • Rice flour - 1 tbsp (for thickness) 
  • Ginger - 1/2 inch piece (optional)

For Seasoning:

  • Mustard seeds - 1/2 tsp
  • Black gram dhal - 1/2 tsp
  • Curry leaves - few
  • Asafoetida - 1/4 tsp
  • Turmeric powder - 1 tsp (optional)

Method:

Cut evenly all the vegetables in one inch pieces and wash thoroughly. Keep aside.

In a large pan add coconut oil mustard seeds,black gram dhal,curry leaves,asafoetida,turmeric powder, salt, vegetables and 1/2 cup water cook for 20 to 30 minutes.

Add ground coconut paste and the rest of the ingredients and cook for 5 to 10 minutes in the low flame. Stir in between.

Finally add curd and mix gently. Standing time of 3 minutes to be given.

Serve hot with rice or chapathi or dosa.
