 MINT RICE


Ingredients:

  • Rice - 1 cup
  • Oil - 1 tbsp
  • Mint leaves - 2 cups (or) 2 medium bunch
  • Green chillies - 4 to 5
  • Dry coconut powder - 2 tbsp
  • Tamarind - Small lemon sized
  • Ginger Garlic paste - 1/4 tsp
  • Salt to taste

For Seasoning: 

  • Mustard seeds - 1/4 tsp
  • Black gram dhal - 1/2 tsp
  • Bengal gram dhal - 1/4 tsp
  • Asafoetida - 1/4 tsp
  • Pepper powder - 1/4 tsp
  • Curry leaves - few

For Garnish:

  • Fried Cashewnuts (or) Fried Peanuts 

Method:

Wash rice 3 times and soak in enough water for half an hour. 

Cook rice till each grain is separate but soft to tough. Spread over a plate to cool.

In a pan heat 3 tsp of oil and fry green chillies, 1/4 tsp of salt (or) 2 drops of lemon juice (optional)  and mint leaves till the leaves shrink. Grind it along with dry coconut powder and tamarind.

Heat rest of the oil, fry the seasonings. Add ground masala paste and fry for 5 minutes. Reduce the flame and add cooked rice.

Mix gently till rice becomes hot and garnish with fried nuts . Serve hot.
