 JACK FRUIT PULAO


Ingredients:

  • Basmathi rice - 1 cup
  • Finely diced jack fruit pieces -  1/2 cup
  • Powdered sugar - 1/2 cup 
  • Honey  - 2 tbsp
  • Ghee - 1 tbsp 
  • Cardamom powder - 1/2 tsp
  • Vanilla essence - 4 drops
  • Cashewnuts - 1 tbsp
  • Raisins - 1/2 tbsp
  • Almonds - 1 tbsp
  • A pinch of yellow food color  (optional)
  • Fresh cream - 1 tbsp
  • A pinch of nutmeg powder 
  • Milk - 1 cup
  • A pinch of salt

Method:

Wash and soak rice for 20 minutes. Boil 1 cup of milk and 1 cup of water in a heavy vessel and cook rice in that separately in  a low flame.

When rice is cooked  and moisture is evaporated add sugar, jack fruit pieces, half of the ghee, food color and salt. Mix gently and keep in low flame.

Add honey, cardamom powder and nutmeg powder. mix well.

Remove from heat add rest of the ghee, fry cashewnuts, raisins and almonds. Pour over rice. Serve hot.
