 GHEE RICE


Ingredients:

  • Basmathi rice - 1 cup
  • Ghee - 2 tbsp
  • Shelled peas - 1/4 cup (optional)
  • Ginger Garlic paste - 2 tsp
  • Cardamoms - 4
  • Bay leaf - 1
  • Cloves - 3
  • Cinnamon - 1 inch piece
  • Fennel  seeds - 1/4 tsp
  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/4 cup (finely chopped)
  • Coconut milk - 2 cup (or) Water
  • Salt to taste

For Garnish:

Fried onions

Fried Cashewnuts

Method:

Wash and soak rice for 2 to 3 minutes.

Heat 3 tsp of ghee in pressure cooker and fry the rice which is taken directly from water. Fry till moisture is absorbed. Keep aside.

Heat 2 tbsp of ghee in the same pressure cooker and fry spices and peas in a low flame till peas becomes tender. Add mint leaves, coriander leaves and ginger garlic paste fry for 3 minutes. Add coconut milk or water when its starts boiling add salt and rice. 

Mix gently and reduce flame. Pressure cook for 10 minutes.

Garnish with fried cashewnuts and fried onions and serve hot with onion raitha or kurma or chicken gravy or mutton gravy.
