 CURD RICE


Ingredients:

  • Rice - 1 cup
  • Fresh Curds - 1/2 cup
  • Milk - 100 ml
  • Butter - 1 tbsp
  • Green chillies - 6 (chopped)
  • Ginger - 1/2 inch piece ( finely chopped)
  • Salt (or) Rock salt to taste

For Seasoning:

  • Mustard seeds - 1/4 tsp
  • Black gram dhal - 1/2 tsp

For Garnish:

  • Green grapes - 1/4 cup (sliced)
  • Pomegranate -   1/4 cup
  • Grated Carrots - 1/4 cup 
  • Cucumber - 1/4 cup (finely chopped)
  • Grated Raw Mango - 2 tbsp
  • Grated Mango Ginger - 1 tbsp 
  • Cashewnuts  -1tbsp (chopped)
  • Coriander leaves - 1 tbsp (finely chopped)

Method:

Wash and soak rice in enough water for 30 minutes. Drain water thoroughly and pour 2 and 1/2 cups of water. Pressure cook for 20 minutes and allow it to cool.

Mash and add thick milk to that and keep aside.

In a pan pour oil add seasonings and fry till golden brown. Add chillies, fry for 2 to 3 minutes and pour over the rice.

Add butter, ginger, mango ginger, grated carrots ,salt mix well. Mix curds one hour before serving.

Garnish with green grapes,pomegranate,cucumber, cashewnuts, and coriander leaves.
