 STUFFED BRINJAL FRY - STUFFED BRINJAL GRAVY


Ingredients:

  • Brinjals - 10 (small size)
  • Oil - 2 tbsp
  • Onion - 2 tbsp
  • Tomato puree - 2 tbsp
  • Tamarind paste - 1/2 tbsp
  • Ginger Garlic paste - 1 tbsp
  • Amchoor powder - 1 tsp (dry mango powder)
  • Pepper powder - 1 tsp 
  • Red chilli powder - 2 tsp
  • Peanut  - 1 tbsp (grind into coarse powder)
  • Salt to taste 

For Seasoning:

  • Mustard seeds - 1 tsp
  • Feenu greek - 1/2 tsp 
  • Fennel (saunf) - 1 tsp
  • Asafoetida - 1/2 tsp

Method:

Wash and slit the brinjals. 

In a microwave safe bowl, add 1 tbsp oil and dry masalas and microwave covered for 1 minute at 100% power. Keep aside.

In another microwave safe bowl, now add 2 tsp of oil , onion paste. ginger garlic paste, tomato puree, salt and mix well. Microwave covered for 2 to 5 minutes at 100% power. Stir in between.

Fill this masala into the slit brinjals. Apply little oil over the brinjals. Microwave covered for 5 to 10 minutes at 100 % power, turning in between.

Finely add tamarind paste  and mix gently. Sprinkle peanut powder on top of  cooked brinjals. Microwave covered for 2 to 3 minutes at 100% power. Serve hot.
