 RICE KESARI BATH


Ingredients:

  • White Rice (or) Basmathi Rice - 1 cup
  • Ghee - 2 tbsp
  • Saffron - 1/4 tsp
  • Sugar - 1 cup 
  • Milk - 2 tbsp
  • Cardamom powder - 1/4 tsp
  • Broken Cashewnuts - 1 tbsp
  • Almonds - 1/2 tbsp
  • Raisins - 1/2 tbsp
  • Food color (optional)
  • Grated coconut - 2 tbsp
  • Salt to taste

Method:

Cook rice softer than normal consistency.

Heat 2 tsp of ghee in a heavy pan or vessel and fry cashewnuts,, almonds and raisins. Keep side.

In the same pan add sugar with 1/4 cup water. Stir constantly in medium flame till you reach soft ball consistency.

Reduce flame add cooked rice with food color (optional) , saffron dissolved in hot milk.Stir gently till moisture dries up.

Remove from heat add cardamom powder, fried cashewnuts, almonds and raisins with rest of the ghee.

Add grated coconut if desired. Serve hot.
