 MUGHLAI FRUIT PULAO


Ingredients:

  • Basmathi rice -1 cup
  • Ghee - 2 tbsp
  • Coconut milk -1/2 cup
  • Milk - 1 cup
  • Water - 1/2 cup
  • Cinnamon - 1 inch piece
  • Bay leaf - 1
  • Cardamoms - 3
  • Cloves - 3
  • Curd - 3 tbsp
  • Ginger Garlic paste - 1 tbsp
  • Mixed fruits - 1 cup (diced)
  • Saffron - 1 tsp 
  • Salt to taste

Grind together:

  • Cashewnuts  - 1 tbsp
  • Almonds - 1/2 tbsp
  • Poppy seeds - 1/2 tbsp

For Garnish:

  • Fried Onion - 1/4 cup
  • Dry Fruits - 1 tbsp

 Method:

Wash and soak rice for 2 to 3 minutes.

Heat ghee in pressure cooker and fry cardamom, bay leaf, cinnamon and ginger garlic paste.

Add drained rice and fry for 2 to 3 minutes. 

Pour 1 cup milk, 1/2 cup hot water with salt, sugar, saffron and ground paste. Mix well.

Reduced flame, cover and pressure cook for 10 minutes. After removing from heat add diced fruit to the rice and mix gently.

Garnish with fried onion and dry fruits. Serve hot with navarathna kurma.
