 MANGO RICE


Ingredients: 

  • Rice - 1 cup
  • Grated sour green mango - 1 cup
  • Oil  - 1 tbsp
  • Green chillies - 5
  • Turmeric powder - 1/4  tsp
  • Pepper powder - 1/4 tsp
  • Grated coconut - 1tbsp
  • Salt to taste

For seasoning:

  • Mustard seeds - 1/4 tsp 
  • Black gram dhal - 1/2 tsp
  • Bengal gram dhal - 1/2 tsp
  • Cashewnuts - 3 tsp (broken) 
  • Curry leaves  

Method:

Cook rice and allow it to cool completely add 2 tsp of oil and mix gently.

Slit half of the green chillies and 2 tsp of grated mango and grind into fine paste.

Heat oil, add seasonings and fry till light brown. Add turmeric powder and mix well.

Add chilli paste with grated mangoes. Fry for few minutes.

Pour over rice with enough salt and mix gently. Garnish with grated coconut. Serve hot with pappad.
