KHANDVI
Ingredients:
For Seasoning:
- Oil - 3 tsp
- Mustard seeds - 1 tsp
- Green chillies - 4 (slit)
- Curry leaves - few
- Asafoetida (hing) - 1/4 tsp
- Cumin seeds - 1/4 tsp
For Khandvi:
- Gram flour - 1/2 cup (besan)
- Curd - 1/2 cup
- Milk or Water - 1 cup
- Turmeric powder - 1/4 tsp
- Chilli, Ginger and Garlic paste - 2 tsp
- A pinch of sugar
- Salt to taste
For Garnishing:
- Coriander leaves - 1 tbsp
- Grated coconut - 1tbsp
Method:
Mix all the ingredients for the khandvi in a deep microwave safe bowl. Microwave at 100% power for 5 minutes, until the mixture thickens. Stirring in between.
Take out the mixture and spread it as thinly as possible on a thick butter sheet with the help of a katori. As it cools, cut into broad strips and roll them into small rolls and serve them in a serving dish.
For Seasoning:
Take all the ingredients for tempering in a small pan and fry for 2 to 3 minutes. Pour this tempering on the khandvi rolls in the serving dish.
Garnish with coriander leaves and grated coconut on the khandvi and serve hot with tomato sauce.
