KOFTA PULAV
Ingredients:
- Basmathi rice - 1 cup
- Saffron - 1/2 tsp
For kofta:
- Ghee (or) Oil - for frying
- Paneer - 1/2 cup
- Urad dhal - 1/2 cup
- Bengal gram flour - 2 to 3 tbsp
- Ginger Garlic paste - 1 to 2 tbsp
- Green chillies - 2 to 3 (finely chopped)
- Red chilli powder - 1 tsp
- Garam masala powder - 1tsp
- Min leaves - 2 tbsp (finely chopped)
- Salt to taste
For Curry:
- Butter - 1 to 2 tbsp
- Bay leaf - 1
- Cardamom -2 to 3
- Cinnamon - 1/2 inch piece
- Cloves - 2
- Onion - 1 (thin sliced)
- Tomatoes - 2 (finely chopped)
- Red Chilli Powder - 2 tsp
- Curd - 2 tbsp
- Coriander leaves - 3 tbsp
For Garnish:
- Coriander Leaves - 1tbsp
- Potatoes - 2 to 3
- Fried Onion - 2 tbsp
Method:
Peel and grated potatoes. Deep fry and keep aside.
Soak dhal for 2 to 3 hours. boil in plenty of water till it becomes soft. Drain water and grind dhal coarsely with mint leaves,green chillies and salt. Mix bengal gram flour, chilli powder, ginger garlic paste, garam masala powder, and paneer make small balls. Deep fry in hot oil or ghee till brown.
Meanwhile soak rice for 2 to 3 minutes. Add 2 cups of boiling water, salt and saffron. Cook till it becomes soft.
In a large pan pour butter or ghee or oil add bay leaf, cardamom, cloves, cinnamon fry for 1 minute. Add onion and tomatoes, red chilli powder, curd, salt and cooked rice. Fry for 2 to 3 minutes in low flame.
Mix Koftas gently. While serving, garnish with fried potatoes, fried onions and coriander leaves.
