 VANGI BHATH


Ingredients:

  • Rice - 1 cup (Long Variety)
  • Brinjals - 1/2 cup 
  • Green Chillies - 4 to 5
  • Small onions (shallots) - 1/2 cup
  • Tomatoes - 3 to 4 (chopped)
  • Oil - 2 to 3 tbsp
  • Turmeric powder - 2tsp
  • Coriander powder - 1tsp
  • Cumin seed powder -1tsp
  • Salt to taste

For Paste:

  • Red Chilli - 5
  • Cloves -2
  • Cinnamon - 1 inch piece
  • Ginger - 1 inch piece
  • Garlic - 3 to 4 flakes

For Seasoning:

  • Mustard seeds - 1tsp
  • Black gram dhal - 2tsp
  • Fenugreek - 1 tsp
  • Bengal Gram dhal - 1tsp
  • Asafoetida a pinch
  • Curry leaves  few  

Method

Cook rice and spread over a plate to cool. Dice brinjals into cubes and soak in salt water. Slit green chillies into two. Grind the masala to thick smooth paste. 

In a pan heat oil, add seasoning with curry leaves . Then fry small onions and green chillies for 5 minutes in a low flame. Add brinjals  tomatoes, ground masala, corinander powder, cumin seed powder, turmeric powder, salt and 1/4 cup water cook in medium flame till brinjals become tender. Stir in between to prevent charring .

Add cooked rice and fry for 5 minutes. Serve hot.
