TOMATO RICE
Ingredients:
- Rice - 1 cup
- Tomatoes - 7 to 8
- Onion - 3
- Oil - 2 tbsp
- Salt to taste
For Seasoning:
- Mustard seeds - 1 tsp
- Black gram dhal - 1/2 tsp
- Bengal gram dhal - 1/2 tsp
- Peanuts or Cashewnuts - 1 tbsp
- Curry leaves - 1 tbsp
Grind together:
- Grated Coconut - 5 tbsp
- Shallots (small onion) - 5
- Garlic - 4 flakes
- Cinnamon - 1 inch piece
- Cardamom - 2
- Red Chilli - 5
- Black Pepper - 2 tsp
For Garnish:
- Coriander leaves - 1 tbsp
Method:
Cook rice and allow it cool.
Cut onions into fine pieces. Grind the tomatoes separately.
Heat oil in frying pan, add seasonings and then fry with onions.
When it becomes transparent add tomato puree and cook for 5 to 10 minutes. Continue frying in low flame with the ground masala paste.
Add cooked rice mix gently.Fry in a high flame till rice becomes hot.
Garnish with coriander leaves . Serve hot.
