 TAMARIND RICE


Ingredients:

  • Rice- 2 cups
  • Tamarind - big lemon sized
  • Red chillies -6
  • Coriander seeds - 2 tsp
  • Fenugreek - 1 tsp
  • Black pepper - 1 tsp
  • Chana dal - 2 tsp
  • Urad dal - 2 tsp
  • Sesame seeds - 1 tsp
  • Asafoetida - 3 to 4 tsp
  • Turmeric powder - 1 tsp
  • Gingilli oil - 4 tbsp
  • Curry leaves - 5 tsp
  • Peanuts - 1/4 cup 
  • Cashewnuts - 3 tbsp (optional)
  • Salt to taste

Recipes Direction:

  • Cook rice and allow it cool. Soak Tamarind in two cups of water and extract.Strain and keep.
  • Heat little oil add all the spices, urad dal, coriander seeds and chana dal and stirring often roast them on a low flame. Then grind into powder keep aside.
  • Heat 4 tbsp oil in a large pan add 1 tsp mustard seeds, 1 tsp urad sal and 1/4 cup peanuts. (if you want you can roast peanuts separately). Add tamarind pulp with turmeric powder and asafoetida. Reduce the extract to thick pulp.
  • Add coarsely powdered. Mix well.  Remove from fire. Add everything to cooked rice and mix well. Heat little oil and add it , with curry leaves to rice.
