TAMARIND RICE
Ingredients:
- Rice- 2 cups
- Tamarind - big lemon sized
- Red chillies -6
- Coriander seeds - 2 tsp
- Fenugreek - 1 tsp
- Black pepper - 1 tsp
- Chana dal - 2 tsp
- Urad dal - 2 tsp
- Sesame seeds - 1 tsp
- Asafoetida - 3 to 4 tsp
- Turmeric powder - 1 tsp
- Gingilli oil - 4 tbsp
- Curry leaves - 5 tsp
- Peanuts - 1/4 cup
- Cashewnuts - 3 tbsp (optional)
- Salt to taste
Recipes Direction:
- Cook rice and allow it cool. Soak Tamarind in two cups of water and extract.Strain and keep.
- Heat little oil add all the spices, urad dal, coriander seeds and chana dal and stirring often roast them on a low flame. Then grind into powder keep aside.
- Heat 4 tbsp oil in a large pan add 1 tsp mustard seeds, 1 tsp urad sal and 1/4 cup peanuts. (if you want you can roast peanuts separately). Add tamarind pulp with turmeric powder and asafoetida. Reduce the extract to thick pulp.
- Add coarsely powdered. Mix well. Remove from fire. Add everything to cooked rice and mix well. Heat little oil and add it , with curry leaves to rice.
