 How to Make Curry Masala Powder?

 Ingredients:

  • Red Gram dhal - 1 cup
  • Rice - 1 tbsp
  • Red chillies - 2 cups
  • Black Pepper - 2 tbsp
  • Fenu Greek - 1 tbsp
  • Cumin seeds - 2 tbsp
  • Coriander seeds - 1/4 cup
  • Dry ginger powder - 1/2 tbsp
  • Curry leaves - 1/2 cup
  • Salt or Rock salt - 1 tsp
  • Cardamoms - 3
  • Cloves - 3 
  • Tamarind - small lemon size
  • Cinnamon - 2 inch piece
  • Garlic flakes -  10


Method:

Dry roast salt, cardamoms, cloves and tamarind separately.

Fry other spices separately in little oil. Powder together.

Add garlic, salt cardamoms, cloves and tamarind at the end and pound again.

Cool and store in clean air tight containers.

 

How to Make Sambar Masala Powder?

Ingredients:

  • Dried Red chillies - 1 cup (broken into pieces)
  • Kaskmiri Red chillies - 1/4 cup (broken into pieces)
  • Coriander seeds - 1& 1/2  cups
  • Cumin seeds  - 2 tbsp
  • Fenugreek seeds - 5 tsp
  • Cinnamon stick - 2 inch piece
  • Dried coconut powder - 2 tbsp
  • Mustard seeds - 1 tbsp
  • Black gram dhal - 2 tbsp
  • Asafoetida - 5 tsp
  • Fried Rice - 2 tbsp 
  • Curry leaves - 1/2 cup
  • Ground turmeric powder - 3 tsp
  • Salt - 1 tsp

Method:

Heat a small pan over low heat.

Separately dry roast dried red chillies,kashmiri red chillies,coriander seeds, cumin seeds, fenugreek seeds, cinnamon stick,dried coconut powder, mustard seeds,black gram dhal,  fried rice,curry leaves and ground turmeric powder until fragrant and only lightly colored. 

Place roasted spices in a bowl. Add asafoetida powder and Salt .Mix well and let cool.

Place mixture in an airtight container and store in refrigerator for up to to 8 to 10 months. Just before using sambar masala, grind to a powder in a spic grinder. Use in sambar.

 

How to Make Punjabi Masala Powder? 

 

Ingredients:

  • Kaskmiri Red chillies - 1/4 cup (broken into pieces)
  • Coriander seeds - 1/2 kg
  • Cumin seeds  - 200 gm
  • Cinnamon stick - 20 gms
  • Black pepper - 100 gms
  • Cloves - 20 gms
  • Black cardamoms - 50 gm
  • Salt - 1 tsp

Method:

Dry everything well under sun and powder together.
