 VEGETABLE BIRYANI

 

Ingredients:

  • Basmathi Rice - 1 cup
  • Carrots - 1 (diced)
  • Potatoes - 1 (diced)
  • Cauliflower - 1 (small)
  • Beans - 30 gm (diced)
  • Peas - 4 tbsp
  • Cabbage - 2 tbsp
  • Onions - 2 
  • Garlic - 7 flakes
  • Cardamoms - 3
  • Cinnamon - 1 - 2 inch
  • Cloves -3
  • Bay leaf -1
  • Marati moggu - 2
  • Curd - 1/4 cup
  • Star anise - 1
  • Cumin seeds - 1/2 tsp
  • Garam masala powder - 2tsp
  • Turmeric Powder - 2 tsp (optional)
  • Saffron - 2 pinch (mix with milk )  (optional)
  • Oil or Ghee - 2 to 3 tbsp
  • Salt to taste

 For Paste :

  • Coconut - 1/2 cup (grated)
  • Coriander leaves - 1/4 bunch
  • Garlic - 6 flakes
  • Mint leaves - 1 tbsp
  • Green Chilli - 10 to 12 (Fry Green Chilli and Garlic in little oil)

For Garnish:

  • Fried Cashewnuts - 10 to 20 pieces
  • Fried Onion - 2 tbsp 
  • Fresh Lemon juice - 1 tbsp

Method:

  • Wash and soak rice for 20 minutes. Drain the water and keep aside.
  • Heat oil or ghee in pressure cooker, add masala spices and then add garlic and onions. When onions are crisp add all chopped vegetables and fry for 5 to 10 minutes. Add Rice fry for 5 minutes.
  • Mix all masala paste and half cooked vegetables. Fry till good smell comes. Pour two cups of boiling water and mix required salt.
  • Cover lid and pressure cook for 10 minutes in low flame.
  • Garnish with fried cashewnuts, fried onions and fresh lemon juice. Serve with onion cucumber raita.
