 SZECHWAN FRIED RICE 

(Szechuan Fried Rice in Indian style) 


 

Ingredients:

  • Basmathi rice  - 1 cup
  • Ghee(or) oil - 4 tbsp
  • Cabbage  - 1/4 cup ( diced)
  • Capsicum - 1/4 cup (diced)
  • Peas - 1/2 cup (cooked)
  • Carrots -1/4 cup (diced)
  • Onion - 1 (chopped)
  • Spring Onion - 1/2 cup (chopped)
  • Tomato garlic sauce - 1 tbsp
  • Worcestershire sauce - 1tbsp
  • Ajinomoto - 1/2 tsp (optional) (or) Fresh Lemon Juice - 1 tbsp
  • Soy sauce - 1tbsp
  • Salt and pepper to taste

For Masala:

  • Red Chillies - 6
  • Garlic - 6 flakes
  • Ginger - 1/2 inch
  • Kashmir Chillies - 2

 

Method:

Wash and soak rice for 5 minutes. Cook vigorously in 10 to 15 cups of boiling water, to which little salt and little oil is added. Drain the water and allow to cool completely.

In the meanwhile cut all the vegetables into fine even sized cubes.

In a large frying pan heat ghee or oil. Add ground masala and fry for 3 minutes. stir in between. Add onion, carrot, cabbage and capsicum fry in a high flame.

When vegetables are tender add salt, pepper and ajinomoto (optional). Toss for 5 minutes.

Mix other sauces and rice. Toss well in high flame for 5 minutes. Transfer to serving plate and garnish with spring onion. Serve hot.
