SWEET MILK PONGAL OR AKKARAVADISAL
Ingredients:
- New Raw Rice - 1 cup
- Green Gram dhal - 1/4 cup
- Ghee - 4 tbsp
- Milk - 10 to 12 cups
- Cardamom - 5
- Jaggery - 1 1/2 cup
- Cashewnuts -1 tbsp (or) Fried coconut pieces
- Raisins - 1tbsp
- Almond - 1/4 tbsp (optional)
- Pistha - 1/4 tbsp (optional)
- Salt a pinch
Method:
Fry whole cardamom in little ghee till good smell comes.Cool and powder finely.
Fry green gram dhal in little ghee and cook separately in enough water till soft.
Boil milk in a heavy vessel. When it starts boiling reduce flame and add washed rice. Keep stirring constantly in medium flame till rice is cooked soft. (Keep one cup of hot milk separately).
If the pongal thickens before the rice becomes soft, add hot milk and continue cooking. Add the boiled green gram dhal. When the rice is cooked and pongal is thick, add jaggery little by little and stir till completely dissolved. Add pinch of salt. Mix well. Remove from fire.
Heat ghee separately and fry cashewnuts , raisins, almonds and Pistha. Pour over pongal with cardamom powder. Mix well and serve hot.
