CAULIFLOWER AND PEAS PULAV


Ingredients:

  • Basmathi Rice - 500 gm
  • Ghee (or) Oil - 3 tbsp
  • Cauliflower - 1 
  • Ginger and Garlic Paste - 2 tbsp
  • Fresh Peas - 1/2 cup
  • Onion - 2 (sliced)
  • Tomatoes - 3 (chopped)
  • Garam Masala Powder -3 tsp
  • Fresh Lemon Juice - 2 tbsp
  • Salt and pepper to taste

For Masala :

  • Small Onion - 12
  • Green Chilli - 10
  • Mint leaves - 3 tbsp

For Garnish:

  • Coriander leaves - 2 tbsp (finely chopped)
  • Fried Cashewnuts - 2 tbsp 
  • Fried Onion - 1 tbsp 

For Seasoning:

  • Bay leaf -1
  • Cardamom - 2
  • Cinnamon -1 (inch)
  • Star anise - 1

Method:

Heat oil in a pan fry small onion , green chillies and mint leaves and grind into smooth paste. Keep aside.

Wash and soak rice for 10 minutes. Drain water and fry in half a tsp of ghee till moisture is absorbed (3 to 5 minutes).

Break Cauliflower into big flowerettes.Heat water in a separate vessel, when it starts boiling add peas and cauliflower. Close the lid and remove from fire. After 10 minutes drain water completely.

Heat Ghee or oil in a Pressure cooker  add bay leaf, cardamom, cinnamon and star anise fry for 2 minutes.

Add onions, ginger garlic paste and  garam masala powder fry for 2 to 3 minutes. Now add tomatoes . when it becomes pulpy add ground paste and 1 tbsp of water cook for 3 minutes.

Add salt and 1 cup of water . When it starts boiling add cauliflower, peas and basmathi rice. Reduce flame and pressure cook for 10 to 15 minutes.

 After removing the lid add lemon juice and gently mix well.Garnish with coriander leaves, fried onions and fried cashewnuts and serve hot with onion raita.
